Red Wine by Stag's Leap Wine Cellars from Napa Valley, California. The 2012 CASK 23 combines the signature perfume notes of FAY vineyard with the structure and minerality of S.L.V. The wine opens with pleasing aromas of black cherry, dark plum, espresso and spice. The wine has a rich, ripe fruit entry that leads to a concentrated core of dark fruit (plum, black cherry, dried currant). The palate is expansive, coating the whole mouth with rich fruit, full and sweet tannins and lingering flavors mocha and black tea. Serve CASK 23 with grilled New York steak, prime rib with au jus, or black pepper-crusted Ahi tuna steaks. The story of CASK 23 began during the harvest of 1974. Back then, the winery enlisted the help of celebrated winemaker Andre Tchelistcheff. As he tasted through various lots of new wines from that year, one lot from S.L.V. was so beautiful and deliciously distinct the winery decided it should be bottled separately. It was named CASK 23 for the large wooden cask in which it was aged. Today, the wine is a blend of the most distinctive fruit from the S.L.V and FAY vineyards, resulting in a wine of extraordinary depth and richness balanced by restraint. Over the years, CASK 23 has become one of the most highly regarded and collected wines worldwide.

The Pinot Gris is made from our 5-acre estate vineyard, Emilia, named after Paul's mother-in-law; it borders the north side of the winery and tasting room. It was planted in 1993 at a high density with two different clones and two different rootstocks. The Estate Pinot Gris is made in a classic style, a dry and food-friendly Pinot Gris that is fearless of acidity.

Red Wine by Noiro from Central Coast, California. Santa Lucia Highlands is notable for its cooling fog and the afternoon breezes that sweep from Monterey Bay across the vineyards. Soil is Arroyo Seco Sandy Loam. This wine is produced from some of the most renowned vineyards in the appellation, including Rosella's Vineyard, which is owned and farmed by Gary and Rosella Franscioni. The growing season here is one of the longest in California, allowing for full flavor development on the vine. In the winery, whole cluster Pinot Noir was carefully pressed upon arrival at the winery. Fermentation initiated spontaneously in a combination of oak and stainless steel fermenters, followed by gravity racking to new and neutral French oak barrels for 10 months of aging, with elevage occurring in a gentle manner. The 2014 Noiro Pinot Noir possesses a brilliant dark ruby red color and very exotic aromas of damson plum, potpourri, melon, orange peel, and mulling spices. A burst of ripe cherry fruit flavors moves smoothly to secondary flavors of mandarin orange, framed by a complex oak spice note. Decidedly medium-bodied, with a lush mouthfeel, dusty tannins, and fresh acidity. The many layers of this rich wine emerge independently, then refocus, leading to a lingering, succulent finish.

Red Wine by Salicutti from Tuscany, Italy. The grapes for the Rosso di Montalcino come from the Sorgente vineyard at 460meters, just behind the winery and less than a hundred meters from the Piaggone vineyard. While many producers use fruit from their younger vines or less desirable grapes to make their less expensive Rosso bottling, Podere Salicutti's Rosso is in fact a vineyard designate. The vines were planted in 1994 and 2001. The soil is calcareous with a mixture of clay, sand, and stones. Because of the exposition of this vineyard, the grapes ripen about a week later than the two Brunello vineyards.

Red Wine by Hewitson from Barossa Valley, Australia. This vineyard uniquely expresses its DNA and flavor profile and is different to any other Shiraz in the Barossa Valley or indeed the world. From one mother vine Shiraz mixed in the Old Garden when that was planted in 1853, rather than harvest the fruit, we harvested the buds and grafted these on to existing 25 year-old and fully mature roots. We did this in 2008. These buds grew into identical clones of the ancient Shiraz. So now we have a single vineyard, 0.8 Hectares in size, all from this one mother vine. This Mother Vine Vineyard is planted alongside the winery in the appellation of Dorrien in Barossa Valley.

The 1er Cru Blanc is produced from a plot of 2.0 hectares (4.9 acres) characterized by stony soil of limestone, clay and silica. Careful selection of grapes in the vineyard and winery with regular battonage (stirring of the lees in the barrel) have produced very pure white wines well-balanced with fantastic acidity.

White Wine by The Donum Estate from Carneros, California. Carneros is renowned for stellar Chardonnay, and this vineyard is a gem. The selection of 100% Old Wente Chardonnay came to us as budwood from the Winery Lake and Larry Hyde vineyards. It's a charming! eld selection, yielding a host of aromas of apple, lemon, orange blossom, lime and creme brulee balanced by the minerality provided by our vineyard's prominent natural acidity. The 2013 Carneros Chardonnay is pale gold in color, with striking aromas of lemon, green apple, melon and linseed oil. The palate is bright and spicy, with lime, papaya and baked apple joined by hints of coriander and starfruit. A beam of a fresh acidity carries through the finish, as tropical flavors linger on the palate.

The Pezsgo is 85% furmint, and 15% harslevelu, harvested from the winery's biodynamic Henye vineyard, and was made in the methode traditionelle style. It has some of the funky, honey characteristics of its furmint sec brethren wines on the nose, but it finishes creamy, toasty and dry.
