Over the past several decades, consumer interest in the fine vintage wines produced by small "boutique" vintners across the United States has grown to rival that of many European estates. This attention continues to intensify, especially for the truly good wines that are reasonably priced. Consumers are, however, unforgiving" especially wine enthusiasts. Second-class wines do not succeed just because a vintner is new. The methods and controls essential to vintners in the production and marketing of top-grade wines have advanced. This second edition of Winemaking has updated and, in some cases, completely revised the material associated with these disciplines. Fine wine is much like other art forms, as it is the infinite variability of factors pertaining to the subject that renders it so complex-and able to attract buyer's attention. Hundreds of different vine varieties are cultivated around the world, and no doubt an even greater number of fruit and berry cultivars. Andwith the addition of such factors as terroir (soil and climate attributes) changing every vintage season, varied vineyard cultivation and harvesting techniques, advancing production technology, dynamic markets, and overall operational philosophy, one can easily understand the enormous breadth and depth of variation that exists. This diversity generates an unimaginable number of different wine possibilities.

In 2007, Keith Cohen purchased New York's Orwasher's Bakery, listed among the top ten bakeries in America. He launched a new line of Artisan Wine Breads in 2009 under the brand name Oven Artisans. Cohen created his new breads with a wine grape starter in collaboration with Channing Daughters Vineyard in Long Island. The technique used dates back to ancient Egypt, where bakers who were baking bread in the same facility as wine was being fermented discovering that the natural yeast in the air from the fermenting grapes would leaven the bread and give it special flavor. In 2010, Cohen premiered his beer bread-a chewy, dark-hued creation with a nutty, robust flavor that comes from the Otis Stout from Sixpoint Craft Ales that's mixed into the dough. Artisan Bread will feature the techniques used as well as the recipes for Orwasher's most famous breads adapted specifically to facilitate home baking.

Three be the things I shall never attain: Envy, content, and sufficient champagne." -Dorothy Parker From pubs, alehouses, wine bars, vineyards, across the table, and under the table comes a flowing river of thoughts about drinking. Some of it you'll find profound, some of it funny, some of it silly. But all of it's about that most inspired of human inventions: alcohol. From the ancient ("The man who isn't jolly after drinking is just a driveling idiot to my thinking." -Euripedes) to the modern ("Alcohol-the cause of and the solution to all of life's problems." -Homer Simpson), here is wit, wisdom, and drunken ramblings about beer, wine, whiskey, gin, and every other alcoholic substance humans have happily used since the beginning of time to pickle their livers. Mixed with favorite drink recipes, short biographies of potable quotables, and information about favorite watering spots, this is a resource you will want to keep next to the bottle of Beefeaters and bitters.

This illustrated introduction to Chinese wine explores the history of wine production in China, the legends and customs that surround it and its place in China today. Traditionally, Chinese wine and spirits were made from grain, and had three important uses: to perform rituals, to dispel one's worries and to heal. Today, wine is still believed to have a therapeutic benefit, but the Chinese beverage industry has expanded on a large scale and now includes famous brands of beer and, increasingly, vineyards producing red and white wine for global consumption. Chinese Wine is indispensable reading for both wine-lovers and all those with an interest in the transition from traditional to modern Chinese culture.

Red Wine by Vall Llach from Priorat, Spain. In the rolling hills of Porrera within the rocky region of Priorat, grow the ancient vines of Celler Vall Llach. Dating back over 100 years, the winery's diminutive, centennial vines provide their flagship wine, Vall Llach, with its characteristic elegant structure and individual character. With enticing aromas of wild-berry jam, fresh plums, baker's chocolate and creamy oak, this wine is captivating, fleshy, and wholly incomparable. Black fruit is supported by hints of sweet spice, mint and dark minerals in the mouth and with great structure and smooth tannins, this wine may be enjoyed now or aged for up to 50 years. The estate recommends opening this wine 30 minutes before drinking and serving it a temperature of 55-60 F. Blend: 65% Carinena, 18% Cabernet Sauvignon, 17% Merlot

A professional booze writer whose life spins out of control tries to piece it back together by embarking upon an epic wine-fueled adventure that takes him to every corner of the U.S. Part vision quest, part guidebook, part journey into the bizarre tapestry of American life, it will make you laugh, make you cry and teach you a whole lot about wine. Former Playboy magazine nightlife columnist Dan Dunn has a made a career out of drinking. Yet this man's man-a connoisseur of beer and whiskey-knew next to nothing about one of the major drinks enjoyed the world over: wine. When a fateful tasting experience coincided with a serious existential crisis, Dunn decided to hit the road on a journey of discovery. To quench his thirst for knowledge (and be able to throw down with the experts), he would educate himself about the industry glass by glass, from winery to winery, in nearly every region in the United States. His bold 15,000-mile road trip took Dunn from Sonoma, California, to Pawley's Island, South Carolina, where he twirled, sniffed, and sipped glass after glass of a vast array of wines with vintners, savants, and celebrities, including Kurt Russell and "The Most Interesting Man in the World," Jonathan Goldsmith. Dunn's mission was to transform himself from a heartbroken schlub who barely knew the difference between Merlot and Meritage, into a confident connoisseur capable of wowing others simply by swirling some fermented grape juice around in his mouth and pronouncing it "troubling, yet brilliant."In American Wino, Dunn shares it all-the good, the bad, the sublime. As his wine knowledge grows and becomes more complex, he shares it with the reader in the form of digestible, actionable nuggets in each chapter. It's like a wine-tasting course at your local community college extension program, only with more sex and less crushing despair. An intoxicating blend of travel writing, memoir, and booze journalism that pairs earthy humor with fine wine for hilarious and enlighten

Red Wine by Domaine La Milliere from Chateauneuf-du-Pape, France - Rhone. Milliere offers the lightest, most delicate wines in our Rhone portfolio. They are subtle, sensual and easy to drink. The winery's older, neutral foudre (and tanks) conserve in the wines the classic aromas of the south, such as lavender, incense and garrigue (wild herbs). Flavors suggest bright, red fruit: pomegranates, raspberries and red plums. Blend: Grenache, Mourvedre, Syrah, Cinsault and Counoise.

This is the personal story of Dennis Olson, a combat marine who served in the Pacific Theater during World War Two. The story follows him through the landing and battle at Tarawa, followed by three months Garrison Duty. When relieved by the Army, he and his Battalion were sent to Kauai, Hawaii to replace the missing troops and equipment, and battle train for the next campaign, which was Guam. After Guam came the worst of the worst for him, that of the invasion and battle for Okinawa, known as "The Last Battle". Dennis experienced combat scenes that were horrific; truly the worse any war has to offer. To have lived through them and come out on the other side alive, with limbs and body parts intact, was a constant source of amazement to him the rest of his life. Though combat is the main thrust of his story, there is more, much more. The lulls between battles constitute the majority of Dennis' experiences in the Pacific. What would you do if you were stuck on an equatorial Pacific island, rationed two canteens of water per day, unable to beg, borrow, or purchase soft drinks, beer, or booze? Dennis and his compatriots found ways. Is it against the law to steal? Of course it is; it might even be one of the 'Thou Shall Nots'. Is it possible to have beer up the gazoo, to produce wine without grapes and a winery, to manufacture White Lightning without a distillery?

Originally founded as the town of Mokelumne in 1869, Lodi formed when a group of settlers persuaded the Central Pacific Railroad to build a route from Sacramento to Stockton through their land. Mokelumne changed its name to Lodi in 1874 and incorporated as a city in 1906. Described early on as the queen city of the San Joaquin Valley, the Lodi area quickly boomed into an agricultural powerhouse, its fertile soil producing wheat, watermelons, orchards, and wine grapes. Laura DeForce Gordon, the second female lawyer in California, called Lodi home, as did winemaking pioneer Robert Mondavi. Lodi is also the birthplace of A & W Root Beer, first sold by Roy Allen at his drugstore on Pine Street. Today Lodi boasts over 75,000 acres of vineyards and 60 wineries, producing over 40 percent of California's zinfandel grapes and making this town the zinfandel capital of the world.

White Wine by Olivet Lane from Russian River, California. The 2013 Olivet Lane Vineyard Chardonnay matches the striking elegance that this special site can confer with an exquisite depth and richness. The aroma is loaded with citrus zest, ripe Bartlett pear, caramel and toffee. The wine's focused acidity supports layered flavors, which enter with Meyer lemon and open to reveal honeycomb, vanilla creme brulee, cappuccino, and hazelnut shortbread. The luxurious textures in the mouth appear seamless, from the superbly silken entry to the seductively satiny finish. Pair this wine with a silky wild Pacific salmon served with citrus beurre blanc to echo its texture and aromatics. This is also the wine to pour during Dungeness crab season, as cracked crab is its ultimate partner. Though enjoyable in the present in the full flourish of its fruit, optimal drinking and aromatic complexity will approach with up to five years of cellaring.

Red Wine by Au Bon Climat from Central Coast, California. Isabelle is comprised of the best cuvees each year from all the wines Au Bon Climat produces and that represents at least 6 different vineyards. The 2012 is a darker, luscious, fruitier Isabelle. It has an intensely perfumed, black raspberry nose with sexy floral and mineral qualities that gain power with air. This one needed no bottle time to show well. Isabelle has proven to age very well, and we routinely drink bottles with 15 years of age. Even though Isabelle is Au Bon Climat's biggest Pinot Noir with loads of intensity and power, it is still balanced and food friendly.

Red Wine by Stonestreet from Sonoma County, California. Black fruit (mulberry, cassis and cherry) dominates the nose, which slowly opens to graphite, warm spice and cocoa nib. Mirroring the landscape surrounding the vineyard blocks, aromatic bay leaf and Madrone add further punctuation to the vivid fruit character in the wine. The palate is generous and supple on the entry, showing ripe dark fruit and an exuberant lift of blood orange and pomegranate, a nod to the freshness of the wine. The finish is laden with graphite, chalky tannins and the ever-persistent bay notes that ground this wine so firmly in the Alexander Valley. While those compelled to drink the 2012 Legacy now will no doubt enjoy it, a decade or two of cellaring will provide greater enjoyment in the future.
