Green tea, the least processed of the Camellia plant (black tea is the most processed), contains phytochemicals called catechins, which are anti-oxidants. The most plentiful catechin in green tea is pigallocatechin-3-gallate (EGCG) and is believed responsible for many of tea’s health benefits.
