Japanese knotweed is a non-native invasive plant in the US, which is not only edible, but delicious. Forage for this plant to make room for native plants, use it for juice, or in baked goods as a substitute for rhubarb. This post explains how to find it, identify it, and juice it. I use the juice for popsicles in a subsequent post.
