Roasted Red Pepper and Italian Sausage Pasta. Italian sausage is hard to find in Colombia (I'm sure I'll find it for a good price eventually) so we use ground hamburger meat and red pepper flakes to make it a little spicy! We also use tomatoes in the recipe to give it more of a sauce.

Crock Pot Italian Beef Sandwiches* So, I don't have all those yummy USA ingredients, so I made my own version. I cut up some pepperoncini peppers and poorer in some jalapeño juice, put half a package of onion soup, some vinegarette instead of Italian dressing, and then some beef broth. Bam. So delish. Towards the end, I added in half an onion and some red pepper to give it some color and veggies.

Becoming Betty: Sour Cream Noodle Bake* this is very similar to a recipe my mom makes "beef and cheese casserole." Instead of cottage cheese (because I can't find it anywhere) I used a package of cream cheese, and I also added Parmesan cheese to the mix. Instead of using canned sauce, I make my own (pretty much make everything from scratch nowadays) and I thought it was delicious. But my mom uses canned sauce and tastes just as wonderful. Whatever floats your boat!

Shel's Kitchen: Copycat Chick Fil A Tortilla Soup* I only used northern beans, no black beans; I also didn't use taco seasoning, but used fresh cumin and garlic, and some chili powder instead. I only used one can of regular corn, no frozen corn, and a chopped up pepper grown in the back yard for extra spice. I mixed cream, cream cheese and milk instead of using half and half.

Black Bean Soup* I added fresh cilantro, homemade salsa instead of canned or from the store, and cumin. Literally couldn't stop eating it!!

Spanish-Rice-in-Rice-Cooker* I made this to go along with our black bean soup (also a pin; check it out) and it was so delicious. We don't have Rotel tomatoes in Colombia, and I never ever used canned food - if a recipe calls for something canned, I make my own version homemade and use it in the recipe. Anyway, instead of the canned tomatoes, I diced up one tomato and a jalapeño (pickled, which is good for your digestion), and then put it a few huge spoonfuls of my homemade salsa (my dad's recipe). I also added much more cumin than the recipe called for.

Black bean enchiladas with avocado sauce* I took this down a much simpler path. Didn't use as many ingredients, and added some rice so that I wouldn't use so many beans. The avocado sauce is killer, though, and Daniel and I love the addition of tomatoes on top! So much yum!

Black Beans and Rice Recipe~ - Farming On Faith* I used cilantro instead of parsley. It was delicious. Have you noticed we've been eating lots of black beans? We've fallen in love with them and also lost some weight while eating more beans and less bread and meat.
