Spanish-Rice-in-Rice-Cooker* I made this to go along with our black bean soup (also a pin; check it out) and it was so delicious. We don't have Rotel tomatoes in Colombia, and I never ever used canned food - if a recipe calls for something canned, I make my own version homemade and use it in the recipe. Anyway, instead of the canned tomatoes, I diced up one tomato and a jalapeƱo (pickled, which is good for your digestion), and then put it a few huge spoonfuls of my homemade salsa (my dad's recipe). I also added much more cumin than the recipe called for.
